Easter and My Before and After Weight Loss Pictures

Easter was fun.   We went to Mount Airy (NC), or you may know it by another name.  It’s the little North Carolina town that is known as Mayberry by many.  We had dinner at my mother-in-law’s place, and went to church services.  Then, before we left, we walked around “Mayberry.”

The shops were all closed, but it was nice to walk around and look in the windows.  We saw some familiar names and faces.  Here’s one that you might remember.

We also had an amazing view on the drive up.  Mount Pilot is a wondrous thing to see.

I also wanted to share a before and after picture of my weight loss.  I still have more weight to lose, but I thought it would be nice to share what I looked like before and what I look like now.



Down 50 Pounds and Loving It

I’m so tickled.  I’ve lost 50 pounds total.  I did some shopping and was thrilled to see that I was out of plus size clothes.  I still have 20 pounds to lose, so I only picked up a couple of items.  I had no summer clothes that would fit, and I didn’t want to buy a lot of clothes that would be too big for me in a few months.  When I am down to the weight I want to be, I will post before and after pictures.

Now, for the not so good news.  I got my new cholesterol numbers.  I did improve, but not enough.  My doctor went up on the mg for my medicine.  I’m a little worried about that.  It’s up to 80mg.  I’m worried about side effects.  At my next appointment, she said that they will check several things when they take my blood, diabetes, liver and kidney functions.

I have been really careful about what I eat.  Unfortunately, I’m one of those people that has a bad family history of high cholesterol.  At least my numbers did show an improvement.  My good numbers went up, and my bad numbers went down.

I’m healthier than I have been in a long time.  I haven’t been down to this weight in years.  I don’t cringe when I look in a mirror.  I have more energy.  I am a lot more active.  I am looking forward to buying a new bathing suit in a couple of months.  I’ll keep you up to date on my progress.

Healthy Low Calorie Oatmeal Cookies

It took several tries, but I was able to come up with a healthy, low in calorie, low fat, and high fiber oatmeal cookie.


1/2 Cup EggBeaters

1 Cup Applesauce

1/3 Cup Brown Sugar

1/4 Cup Blue Bonnet Light

1 Cup Whole Wheat Flour

2 Cups Oats

1 tsp Vanilla

1 tsp Salt

1 tsp Baking Soda

1/2 tsp Cinnamon

1/2 tsp Nutmeg

1/2 Cup Polaner Sugar Free with Fiber Concord Grape Jam


Combine sugar and wet ingredients, butter, applesauce, jam, eggbeaters, vanilla, in a bowl.  Mix well.  Add the remaining ingredients.  Mix well.  Using a melon scoop, scoop batter onto a baking sheet and flatten each one out.  Bake in the oven at 350 degrees for about 15 minutes.  Baking time may vary depending on how hot your oven cooks.  Makes about 39 cookies.

0.5 grams of fat


Healthy Lifestyle Versus Diet

When I hear the word “diet”, I cringe.  The first thing I think about is what I can’t eat.  When I hear “healthy lifestyle”, I think about things that I can eat, only less of them.  I prefer to think that I am living a healthy lifestyle, instead of dieting.  Dieting has always meant to me, temporary.  Something you do to lose some weight, and then you go back to eating the way you were.

I don’t want to do that.  I want to eat healthy, lose weight, and then maintain my weight when I reach my goal.  In order to do that, I have to eat healthy.  I have been doing this for a little more than 4 months, and have lost 35 pounds.  The weight is coming off slowly.  I have more energy.  I feel better.  I am also exercising.

There isn’t a food group that I can’t eat.  There are ways that food are cooked that I need to avoid.  Chicken and fish are great proteins to eat, but the worse thing to eat if they are fried.  I don’t eat fried foods anymore.  Sweets are bad for you in large quantities, because of the sugar in them.  But, if I pick sweets that have a low sugar content, and limit the amount I eat, that is fine.  Also, I have found that if I make my own sweet desserts, I can eliminate some of the sugar content normally found in that item.

I have reduced the portion sizes of the foods I eat.  I use a smaller bowl, or dish, to eat out of.  I also eat slower, and drink water before I eat.  This helps to fill me up faster.  When I am in the kitchen, and go to reach for something to munch on, I stop and ask myself two things:  1.  Am I hungry?  2.  Am I reaching for something to eat because I just want to munch?

For either question, if the answer is yes, I reach for something that is healthy.  Carrots are my go to snack when I have the munchies.  A bowl of vegetables and fruit if my stomach is telling me I am hungry.  It’s all about the choices you make   when you go to reach for food.  I am always eating something, but I am eating healthy.  Now that I am used to eating this way, I have found that I don’t ever feel like I am starving.  I eat small meals, and snacks, all through the day.

If you are thinking about going on a diet, don’t.  Instead, change to a healthy lifestyle.  Healthy foods and exercise. are what you need.  Think long-term.  You have a better chance of succeeding if you don’t eliminate food groups from what you eat, just the way they are prepared.

Fish Tacos Recipe

I found this recipe, and wanted to share.  I am going to make this tonight for my family, but I will make some changes.  For the Frozen Fish Sticks, I will be using left over salmon.  For the Cheddar Cheese soup, I will use Newman’s Own Black Bean and Corn Salsa.  I’ll have the taco shells for the kids, but I will be using whole wheat tortillas.


16 frozen fish sticks (fingers)
8 medium taco shells
2/3 cup condensed cheddar cheese soup
1/2 cup canned, diced tomatoes with jalapenos, drained
1 cup shredded lettuce

Preparation Time: Approximately 3 minutes

Cook Time: Approximately 12 minutes


Preheat oven to 450°F. Put fish sticks on a sheet pan and bake until crisp, about 12 minutes.  Two minutes before fish sticks are done, arrange taco shells on tray, place in the oven, and heat through.

To assemble tacos: Spoon 2 teaspoons cheddar cheese soup into the bottom of each taco shell. Put 2 fish fingers in each taco shell and top with 2 more teaspoons cheese soup, 1 tablespoon diced tomatoes, and a small portion of shredded lettuce.

Servings: 4

Low Calorie High Fiber Breakfast

If you don’t have a lot of time to fix a healthy meal for breakfast, this is something that is for you.  It’s quick to put together, and is healthy.  Rice Cakes alone have no significant nutritional value.  When you add Polaner Sugar Free with Fiber jam, you are giving yourself a much needed fiber boost.

The First Thing I Want To Buy When I Reach My Weight Goal

I’ve given it a lot of thought.  When I reach my goal weight, I will be buying a new wardrobe.  One thing I am going to include in my new wardrobe is a little something like this:

This is EdenFantasys I Love You Babydoll.  I think my husband would like it.    I also like the corsets they have on their site.
Exercising and watching what I eat isn’t easy.  I have days when it’s not a problem.  Then there are the days when I just don’t want to do it.  I have my medical reasons for doing it, but that’s not always enough to motivate me.  The new clothes I will buy help to motivate me.  Little outfits, like the one above, motivate me.

I also like this babydoll and robe.

I can wear the robe over the babydoll when the kids are awake.  After they go to bed, the robe can come off.

And look at this dress:

I don’t think my husband would let me out of the house in something like that.  I’m not sure it’s meant to be worn out in public.  It’s in their babydoll and chemise section, on EdenFantasys.  It looks like something you could put a jacket over, and go out to a nightclub.  But it would be so nice to be able to fit into it, and look good.

Got An Early Start This Morning

The first day of the Mamavation Challenge exercises kicked my but yesterday.  Planks look so easy, but they aren’t.  My body felt like jello when I was done.  I woke up early this morning and decided to get as many of the 10,000 steps daily goal out of the way before the kids woke up.  I was able to get 2,000 done.  8,000 left.  I think I will get those done after I get the kids onto the school buses.  It’s cold out, but the walking heats the body up quickly.

I learned that Lean Cuisine meals can be tricky.  I bought a couple that had two servings in them.  Luckily, I noticed that before I ate both servings last night.  My daughter was happy about that, because that meant I was able to share it with her. I also learned that my first attempt at the low calorie, low fat oatmeal cookies was better than I thought.  My son had munched out on them.  I was also able to have a couple yesterday without going over my calorie and fat limit.

My husband was in a bad mood when he came home from work yesterday.  The two weeks off for the holidays was too long.  He was tired, and stressed out.  I left him alone until he started to talk about it.  I can’t remember the last time I’ve seen him in that kind of mood.  I hope today is better for him.

My daughter was still doing her homework when he got home last night.  She didn’t finish it until 7:30.  That’s way too long.  It’s not that she had a lot of homework, she just wasn’t concentrated on it.  She kept getting up to do something else.  It’s so hard to get her focused on her homework.  I hope she does better today, because she has church classes tonight.

Time to help the kids get ready for school.

Update:  Did the other 8,000 steps.  Took 1 hour and 15min, for a total of 1 hour 40 min for the full 10,000 steps.

Wrestling With Carbs, Calories, and Fiber

I’ve been eating healthy for about 4 ½ months. I’ve been exercising for about 6 weeks. I couldn’t exercise before that because of my undiagnosed endometriosis and the surgery I had to have because of it. My cholesterol was high in August, and higher in December. I’m working hard on lowering it and on losing weight.
I’ve lost 30 pounds since I’ve started my healthy lifestyle diet. I’m having a hard time with figuring out what I should be eating. I did some research, and different websites say different things. I took what they had written on their sites and Have come up with what I think works for me. I’m trying to stick to 1200 calories a day. This is difficult. I tracked what I was eating the last two days, and was only getting about 1000 calories.
I am trying to keep my carbs at about 150g a day, my fiber at 20g, and my fat under 20g. With what I have been eating lately, my fat grams a day are under 10g. My fiber is averaging about 16g a day. If I get it higher, I also increase my carbs.
It’s a balancing act. Eat this, don’t eat that. If I raise the grams of good x, I’ll raise the grams of bad x. I can’t live without grains, so a low carb diet isn’t right for me. I have switched my bread to a wheat bread that is high in fiber. I have found that if I start my day with an egg sandwich, I eat better the rest of the day. I use Egg Beaters, and am so happy that they exist.
I’m working on an oatmeal cookie recipe that is low in fat and carbs. My first attempt at it was today. I wasn’t happy with the taste of them. The kids like them. I’ll re-work the recipe and try them again next weekend.
I am going to participate in the Mamavation Challenge. It’s difficult to diet and exercise alone. I’m hoping that having an online community to do this with will help. I have 45 pounds left to lose. I’ve told my husband to save some of our tax money for me to use for a shopping spree when I reach my goal weight. I really hope that by the time summer arrives, I can put on a bathing suit and not be embarrassed.
